Note on thickening with sweet potato flour
Only thing about the sweet potato FLOUR (not starch) is that it thickens ALL AT ONCE. so, sprinkle some in (or add as a slurry of flour and water) and then stir and WAIT for about 5 minutes before using more. I botched up the first set of sauce because I was not aware it takes a while for the heat to set it to thickening. Blob on a spoon is not good for noodles. :) seems to be about 1 1/2 to 1 as the thickening ratio compared to flour (1 1/2 times as strong). So, fairly similar
