Onion, Pepper, Chicken and Celery saute for salad

Had a yummy dinner tonight.  Took onion, bell pepper, and celery and sauteed them in canola oil (any oil would do) until soft and translucent (onions).   Added shredded cooked chicken and cooked until all hot and flavors blended.  Figured that 1 protein = 2 ounces based on a guess (should really measure ingredients before I throw them in the skillet).  Had between 1/2 and 2/3 cup of the mix on a bed of shredded romaine lettuce.  Topped with a bare sprinkle of feta cheese and a tad of ranch dressing.  Oh my, it was really good!

Specific ingredients:

1 large onion, diced and separated into chunks
1 large red bell pepper, diced (might be better using 2 peppers)
3-5 stalks of celery, diced

Oil enough to coat the pan.

Saute the veggies until tender.

Add between 3 and 4 cups loosely packed shredded COOKED chicken (about the same amount as the sauteed veggies).

Continue to cook/saute until all is hot and flavors have melded some.  Adding butter tastes nice!

Take about 1/2 to 2/3 cup of the mixture.  Place over 1 to 1 1/2 cups shredded romaine lettuce.  

Top with less than 1 tablespoon ranch dressing and 1 teaspoon of finely crumbled feta cheese.
