Recipes - Caramel Covered nuts, Ketchup, Home Fries, Gravy

Yummy Treat: 

Homemade "caramel" = 2 tablespoons honey and 1 tablespoon butter melted 1 minute in the microwave.  Stirred with metal spoon after is out.  Add vanilla or flavoring if wanted.

THEN - ADDED a handful of cashews and a handful of almonds.  Mixed them in well.  Ate with a spoon.  Super good over ice cream and yogurt. 

Make sure you use safe for you ingredients

Ketchup - Homemade, corn and wheat free AND Home Fries - October 2012

homemade ketchup. Next time will increase vinegar, add rosemary, and increase onion and garlic. Was right sweetness (not very), but could use a tad more tang and a tad more spice/flavor
Made homemade ketchup: Used about 1 cup of safe-for-me tomato paste Added about 1 cup of water ...
Added spices (Dried, powdered - MAKE SURE ARE SAFE FOR YOU): Chili powder (1/4 teaspoon) All-Spice (1/4 teaspoon) Cloves (1/4 teaspoon) Cinnamon (1/2 teaspoon) Oregano (1/2 teaspoon) Mustard (3/4 teaspoon) Onion (1 teaspoon) Garlic (3/4 teaspoon) Rosemary (3/4 teaspoon) Added Honey - 1 tablespoon or so Added Cane Vinegar - 1-2 tablespoons. Mixed it all well. simmered on lowest heat to produce a simmer for 45 minutes. While this was cooking made some home fries: 5 pounds red taters, washed, spots removed, cut into sticks 1/4 cup oil Spice Mix: Onion Powder, Garlic Powder, Rosemary Powder, Salt - about 1/8 cup spice mix. Dump taters into big bowl. Drizzle over with oil. toss. Add 1/2 spice mix. Toss. Add rest spice mix. Toss. Spread flat (1 layer) onto cookie sheet Bake at 350 for about 45 minutes to an hour. Turned out wonderfully.

Gravy

Gravy is super easy to make. It is just broth from whatever meat or veggie you made. Heat the broth to boiling. mix some starch (whatever is safe for you) with some COLD water. Whisk the starch mixture smooth (no lumps). Should be the thickness of cream or a melty milkshake. While stirring your broth continuously, slowly drizzle in some of the starch mixture. Stir a minute or so. Stop drizzling when the gravy is your preference of thickness. Reduce heat and cook another minute or two (still stirring constantly). Pitch the rest of the starch.
To make a milk gravy, add the milk to the broth first. Then only bring to a medium simmer. Do the rest like clear gravy.
...and if you get lumps, dump into a blender and pulse.
There are more complex ways to make a gravy, but this is a 5 minute, make it easy way. We have done it like this for years.
And yes, you can make bean gravy, potato gravy, etc. Add seasonings as you wish for different flavors.
