Recipe: Cheesy Mashed Potatoes

Please make sure to use safe for you products. I used Homestead Creamery 1/2 and 1/2, Homestead Creamery butter, farmer's market (local vendor) cheese, and farmer's market potatoes. Cheesy Mashed Potatoes Nutrition Info...
Calories: 262.7 Fat: 17.8g Carbohydrates: 14.0g Protein: 12.0g Ingredients Approximately 2 cups baked potatoes (skinned), mashed with fork, hand-masher, etc. (takes about 2 minutes to peel skin off and mash) 1.5 cups shredded MEDIUM cheddar Cheese. Freshly shredded (this takes about 3 minutes) 2 tablespoons 1/2 and 1/2, cream, or milk 1 tablespoon salted butter. Directions Take enough baked potatoes to make about 2 cups after skinning. Mash fairly well (takes about 2 minutes). Pour in milk and butter. Do not need to mix. Put in Microwave for 3 minutes. While tater mix is heating, shred 1 1/2 cups MEDIUM cheddar cheese (the tang from the medium cheese melds with the smooth flavor of the taters = really yummy). When tater mix is heated through, add shredded cheese, and mix well with a heavy spoon (cooking spoon does fine). Makes 4 servings of just over 1/2 cup each.
