Grain Free meatballs

Number of Servings: 40

Ingredients

    2 pounds ground beef (leanest available)
    3 eggs
    3 cloves garlic minced
    3/4 cup freshly grated parmesan cheese

    1 cup grain-free breadcrumbs (2 servings of the grain free bread pulsed through a food processor)
    1 teaspoon of rosemary powder
    1 teaspoon oregano powder
    1 tablespoon onion powder


Tips

Can also add veggie puree to the meat, can cook in tomato sauce, can oven bake instead of simmering in broth, can add shredded mozzarella cheese to the mix before cooking or can add other cheeses. Can change spices and go with Mexican and taco spices instead of Italian and spaghetti spices. Can cook in a crock pot instead of in a pan on the stove.

Directions

mix wet ingredients. Add crumbs and spices. Mix well. Roll into 36 meatballs. Drop into simmering beef stock, chicken stock, or water. Cover and simmer for 30 minutes.

Done when cooked through and no pink meat is left

Serving Size: makes 40 meatballs of 1 ounce each (uncooked weight)
